This tomato and red onion salsa is really quick and simple to make! It is perfect for serving with salads, barbecues, or stuffing pitta breads with as an accompaniment to the other fillings!

Tomato and Red Onion Salsa
Recipe
Ingredients (serves 4):
- 4 large tomatoes
- 1 red onion
- handful of fresh flat leaf parsley
- squeeze of lemon juice
- salt and pepper, to season
Method:
- Finely dice the tomatoes and red onions and chop the fresh parsley.
- Stir the three together in a bowl, squeeze in a little lemon juice and season to taste with salt and pepper.
