Walnut Chocolate Brownies

I was craving brownies the other week and thought – how could I make my go-to brownies a little bit different? Well I’ll do something crazy and add walnuts instead of pecans, haha!

I know, these Walnut Chocolate Brownies are no stroke of genius, but my basic brownie batter is just SO good (although I say so myself). You can pretty much throw any type of nut, chocolate or fruit at it and they’ll be nice. Make sure to check out of my other recipes below if you’re looking for some inspiration.

Amazing Walnut Chocolate Brownies

Every good brownie starts of with an amazing batter, and though everyone may claim to have the best, I am actually convinced the recipe below is THE BEST! 😉 It´s a twist on my recipe for the *BEST* Brownies EVER, so make sure you check those out, too!

The most important ingredient for making a top-notch, rich chocolate brownie is the chocolate you use! It has to be a really good quality dark chocolate, the one with 70-80% cocoa solids is the best! Don´t worry about it being too dark for your usual liking, it doesn´t taste too dark in the brownies as the sugar balances everything out! I tend to use Dr Oetker´s Chocolate for Bakers, either the dark or very dark version, or I use Lindt 70 and/or 85% dark chocolate.

Finally, I added walnuts to these brownies instead of the pecans I use in my classic go-to recipe. I chop them roughly and not too finely, so that there is still a bit of crunch when you bite into the brownie.

You´ll also need a good baking tin to bake your brownies in. I absolutely swear by this 20x34cm Brownie Tin from MasterClass! I have been using it for years and it is absolutely PERFECT – I use it for all of my traybake recipes!

Walnut Chocolate Brownies

Recipe

Ingredients:

  • 175g butter
  • 175g dark chocolate, broken into pieces
  • 3 large eggs, beaten
  • 250g soft brown sugar
  • pinch of salt
  • 120g plain flour
  • 150g  walnuts, roughy chopped
  • A little icing sugar, to dust

Method:

  1. Preheat the oven to 180°C. Grease the brownie tray and line with baking paper.
  2. Place a heat-proof bowl over a small pot of simmering water without the bowl touching the water. Break in the chocolate and add the butter, then gently warm and stir until fully melted and combined. Remove from the heat and set aside to cool for a few minutes.
  3. Once the melted chocolate and butter mix has cooled slightly, stir in the brown sugar and salt.
  4. Gradually add the beaten egg, mixing well between each addition until smooth.
  5. Then sift the flour into the mix and gently stir it in until fully incorporated. Finally, stir in the chopped walnuts making sure they are evenly distributed throughout the mix.
  6. Pour the walnut chocolate brownie batter into the prepared tin and level the surface.
  7. Bake the brownies in the pre-heated oven for 20-25 minutes. The brownie should start to shrink away from the sides of the tin and look fully baked on top. Unlike with other cakes, a skewer inserted into the middle should come out with a little bit of batter attached to it to make a fudgy brownie.
  8. Leave to cool in the tin for a few minutes before transferring the walnut chocolate brownies to a wire rack until cooled completely.
  9. To finish, dust the brownies with a little icing sugar and cut into 18 pieces.
