I love a good traybake recipe and this Walnut and Orange Traybake has become a firm favourite. I have made it a few times now, and it has gone down very well at a bake sale and in my lab group when I made it for someone’s birthday. This Walnut and Orange Traybake is a cake for any occasion and is so easy to make – you’re going to love it! It can be cut into 20 generously-sized squares so can serve a crowd!

How to make this Walnut and Orange Traybake

This Walnut and Orange Traybake recipe is extremely easy to follow as it uses a simple all-in-one method. All of the ingredients are combined in one bowl, meaning minimum effort and minimal cleaning up! Make sure to use a few tbsp of the flour to coat the chopped walnuts first, as adding them coated in flour will prevent them from sinking to the bottom of the cake while baking.

The icing is a delicious cream cheese icing that is sweet and tangy with orange zest. Make sure you beat the butter well before adding the cream cheese to avoid any lumps of butter in the icing.

Ingredients

FOR THE CAKE

  • 220g unsalted butter, at RT
  • 220g caster sugar
  • 3 large eggs
  • Zest of 1/2 orange (or 1?)
  • 2 tbsp orange juice
  • 1 tsp orange extract
  • 220g self-raising flour
  • Pinch of salt
  • 100g chopped walnuts

FOR THE ICING

  • 40g butter, softened
  • 200g full fat soft cheese, at room temperature.
  • 150g sifted icing sugar
  • Grated zest of 1 orange
  • 1/2 tsp orange extract
  • 20 walnut halves, to decorate

Method

  1. Preheat the oven to 180°C and lightly grease and line a 30x20cm traybake tin with baking paper.
  2. Roughly chop the walnuts for the cake and toss them in 2-3 tbsp of the self-raising flour. Set aside until needed.
  3. Put the remaining flour and all the other cake ingredients into a large mixing bowl and beat with an electric whisk until smooth and well combined.
  4. Carefully fold in the walnuts until evenly distributed throughout the cake mix. Transfer the batter into the prepared baking tin and level the surface.
  5. Bake the Walnut and Orange Traybake in the preheated oven for 25 minutes or until it starts shrinking away from the sides of the tin and an inserted skewer comes out clean.
  6. Leave the cake to cool completely on a wire rack before carefully removing from the tin and peeling off the baking paper.
  7. To make the icing, beat the butter in a mixing bowl for 3-5 minutes until pale, fluffy, and very soft. Add in the cream cheese, icing sugar, orange zest and extract and beat until smooth. Spread the icing over the cake, then cut into 20 squares and decorate each one with a walnut.
