Spaghetti Pesto with Feta Cheese

Everyone has heard of spaghetti pesto, but why not give the dish a certain je ne sais quoi and sprinkle over a little feta cheese? This spaghetti pesto with feta cheese is a real student go-to meal! It´s cheap, quick and easy to make!

The feta cheese really elevates the dish by introducing a new texture and freshness to the dish. I don´t usually like spaghetti pesto, but adding feta really makes all the difference!

Quick and Easy Student Cooking

With only 3 ingredients, there is literally 0 preparation involved in this meal. All you have to do is cook the pasta, dollop on a spoonful of pesto and sprinkle with feta cheese!

Remember to salt the pasta water properly for the best flavour, and reserve some of the cooking water to help coat the spaghetti with pesto later!

Of course, using shop-bought pesto is the easiest way to make this Spaghetti Pesto and Feta Cheese lunch or dinner. However, if you are feeling up to the challenge you could try making your own! RECIPE TIP:

Spaghetti Pesto with Feta Cheese

Recipe

Ingredients (serves 1):

  • 80g spaghetti (white or wholegrain)
  • 1-2 tbsp pesto (from a jar)
  • 50g feta cheese
  • fresh cherry tomatoes, to serve (optional)

Method:

  1. Bring a small pot of water to the boil. Once it is boiling, add some salt to the cooking water.
  2. Cook the spaghetti according to packet instructions. Before draining the pasta through a colander, place a small mug or measuring jug into it. That way you can save some of the pasta water once you are draining the pasta. Once you have a little of the cooking water, remove the mug and drain the spaghetti completely (see more tips for cooking pasta here).
  3. Add the cooked spaghetti into your bowl and spoon on the pesto. Pour in a little of the reserved cooking water and toss until the spaghetti are fully coated.
  4. Crumble over the feta cheese and optional sliced cherry tomatoes. Enjoy!
