Short-cut baked sweet potato with cottage cheese and chive dip.

The perfect short-cut to a baked potato!

Who doesn´t love a baked potato?  Jacket potatoes are the perfect lunch: they are filling, cheap and absolutely scrumptious. Plus, you can fill them with anything you like!

But who really has time to bake the potato in the oven for 40 minutes or more? Such a waste of time and electricity, especially when you are only making one for yourself… Well, get ready for this short-cut to a delicious baked potato, that is ready to eat in under 10 minutes!

Simply prick all over with a fork, rub with some olive oil and seasoning and put it in the microwave! And then it´s done!
If you have time and want a crispier skin, then you can place the potato into the oven for a further 10 minutes to crisp up.

You can use this short-cut method with any potato you like, be it a normal baking potato or even a sweet potato. The size of the potato will determine how long it needs in the microwave. You can also speed up the cooking time by halfing the potato before microwaving or half-way through cooking.

Fill your short-cut baked potato with anything you like, ranging from baked beans to chilli con carne or cottage cheese. I will share a cottage cheese and chive dip recipe with you below, but feel free to check out my recipes for a mixed bean chilli (vegan!) or coronation chicken which would also make for a great filling!

It´s also nice to serve the baked potato with a fresh salad on the side or topped with some diced avocado.

Short-cut baked potato lunch

Short-cut Baked Potato with a Cottage Cheese and Chive Dip

Recipe

Ingredients (serves 1):

  • 1 medium potato of your choice (baking potato, sweet potato, etc.)
  • 1 tsp olive oil
  • Salt, pepper
  • 100g cottage cheese
  • 2 tbsp natural yoghurt
  • small bunch of chives, finely chopped
  • fresh salad, to serve

Method:

  1. Prick the potato multiple times with a fork. Then, rub with a little olive oil, some salt and some pepper.
  2. Place onto a microwave-safe plate and microwave for 4-5 minutes.
  3. Turn the potato. Depending on how soft it already feels, microwave for a further 3-5 minutes (this will depend on the size of your potato). When you think it´s done, you can cut it in half and check if it is cooked in the middle. If not microwave for a little longer.
  4. In the meantime, make the cottage cheese and chive dip. Place the cottage cheese and natural yoghurt into a bowl. Finely chop the chives and add to the bowl. Mix well, then season to taste with salt and pepper.
  5. Slice your baked potato in half and mash the insides slightly. Spoon on your cottage cheese and chive dip. Enjoy!
