Now, I don´t know about you, but I live off of sandwiches for lunch during the week at uni! I always look forward to eating my packed lunch throughout the morning, especially when I have made a coronation chicken sandwich!!!
This is going to be a series of various sandwich fillers that you can make in no time. Feel free to make a large batch of this coronation chicken sandwich filler, store it in the fridge for 2-3 days and use it to make sandwiches a few days in a row.
You could also top a baked potato with this coronation chicken or use it to fill a wrap or pitta bread. Also great lunch ideas!
Coronation chicken is one of my favourite sandwich fillers and is also perfect for using up any left-over chicken you may have from a roast. You can make it as spicy as you like, depending on how much curry and chilli powder you add – and the sultanas are completely optional!
I only use them if I have some in the house, if not it tastes perfectly fine without them.
So, without further ado, let´s get on with the recipe.
Coronation Chicken Sandwich Filler
Recipe
Ingredients (for 1 sandwich, easily doubled, tripled, etc.):
- 100g shredded chicken (roughly half a chicken breast)
- ½ tbsp mango chutney
- 1 tbsp mayonnaise
- ½ tsp cinnamon
- 1 tbsp curry powder
- a handful of sultanas (optional)
- salt and pepper to season
Method:
- If not using leftover chicken, fry your chicken breast fillet over a medium heat for 8-12 minutes until cooked through. Season with a little salt and pepper whilst cooking. Then set aside to cool.
- Roughly shred the freshly cooked or leftover chicken with a sharp knife. Place all the other ingredients into a bowl. Mix well. Next, add the shredded chicken and stir into the mango chutney and mayo mix. Lastly, season to taste with a little more salt and pepper.
- Spread onto some bread to make a sandwich, pile high on a baked potato or fill into a wrap or pitta bread for a perfect lunch!
