Looking for a quick, easy and scrumptious lunch idea? Then why not try this delicious pizza baguette?

This recipe is super simple yet a very satisfying lunch to have. Using a bake-up or fresh baguette, it is easy and quick to make – it takes only up to 15 minutes! Pre-heat the oven, prepare your toppings, put it on your bread and then just wait for the cheese to melt! Easy-peasy lemon squeezy.

As your pizza sauce, simply use a few tablespoons of tomato passata or chopped tomatoes from a tin.
Like with any pizza the choice of toppings is yours! Everything is possible, ranging from onions, peppers to salami or ham. Most importantly choose a cheese that will melt nicely on top, for example mozzarella or gouda cheese.

This pizza baguette is very nice served with a fresh green salad on the side.

Recipe Tipp:

-You can also use a fresh baguette or a different roll of your choice, reducing the cooking time even further. Simply skip the first oven step and add your toppings directly onto your baguette. Finish in the oven for 5-10 minutes until the cheese has melted.

-If the passata/chopped tomatoes seem to runny for your liking, mix with a bit of tomato purée to thicken.

Pizza Baguette

Recipe

Ingredients (serves 1):

  • Half a bake-up baguette (about 125g), white or whole-grain
  • 2-3 tablespoons of chopped tomatoes or passata
  • Toppings of your choice (e.g. onions, peppers, tomatoes, veggies, ham, salami, etc…)
  • Cheese of your choice (e.g. mozzarella, gouda, cheddar…) , sliced or grated
  • a sprinkling of mixed dried herbs (optional)

Method:

  1. Preheat your oven according to packet instructions (typically between 180-200°C).
  2. In the meantime, prepare and slice your toppings and cheese (you can skip this step if you are using grated cheese).
  3. Bake your baguette in the pre-heated oven for 4-5 minutes.
  4. Once done, remove from the oven and slice in half (careful, it will be hot!).
  5. Spoon on the chopped tomatoes or passata and spread over both halves of the baguette. Place on your toppings followed by the cheese. If you like you could sprinkle some dried herbs on top for some extra flavour.
  6. Return to the oven and bake for a further 5-10 minutes, or until the cheese has melted.
  7. Enjoy!
