Looking for a quick, easy and scrumptious lunch idea? Then why not try this delicious pesto, tomato and mozzarella baguette?
I am not kidding when I tell you that my sister has this for lunch about 3-4 times a week – she absolutely loves it! We have to stockpile on pesto, tomato and mozzarella and baguette to keep up with all her needs!

This recipe is super simple yet a very satisfying lunch to have. Using a bake-up or fresh baguette and only 4 ingredients in total, it is easy and quick to make – it takes only up to 15 minutes! Pre-heat the oven, prepare your tomatoes and mozzarella, put it on your bread and then just wait for the cheese to melt! Easy-peasy lemon squeezy.

This pesto baguette is very nice served with a fresh green salad on the side.

Recipe Tipp
You can also use a fresh baguette or a different roll of your choice, reducing the cooking time even further. Simply skip the first oven step and add your pesto, tomato and mozzarella directly onto your baguette. Finish in the oven for 5-10 minutes until the cheese has melted.

Pesto, Tomato and Mozzarella Baguette

Recipe

Ingredients (serves 1):

  • Half a bake-up baguette (about 125g), white or whole-grain
  • 2-3 tbsp of pesto from a jar
  • 10 cherry or 2 medium sized tomatoes, sliced
  • Mozzarella cheese, sliced or grated

Method:

  1. Preheat your oven according to packet instructions (typically between 180-200°C).
  2. In the meantime, slice your tomatoes and mozzarella cheese (if using a ball, you can skip this step if you are using grated mozzarella).
  3. Bake your baguette in the pre-heated oven for 4-5 minutes.
  4. Once done, remove from the oven and slice in half (careful, it will be hot!).
  5. Spoon on the pesto and spread over both halves of the baguette. Lay on the slices of tomato followed by the mozzarella cheese.
  6. Return to the oven and bake for a further 5-10 minutes, or until the cheese has melted.
  7. Enjoy!
