Ingredients you’ll need for the Peanut Butter and Chocolate Chip Cookies

These peanut butter and chocolate chip cookies are very easy to make and only require a few ingredients! First of all you need a few store cupboard essentials such as flour, baking powder, brown sugar and an egg. Then, to add the flavour, you need some smooth peanut butter (make sure it’s 100% peanut with no added sugar) and some chocolate chips. If you have some vanilla sugar you can add that, alternatively half a teaspoon of vanilla extract will do the trick! Finally, these biscuits are decorated with some unroasted and unsalted peanut halves.

Peanut Butter and Chocolate Chip Cookies

Recipe

Ingredients (makes 15-20):

  • 150g plain flour
  • ½ tsp baking powder
  • 50g butter, softened
  • 75g smooth 100% peanut butter
  • 75g soft brown sugar
  • 1 packet of vanilla sugar (7g) or ½ tsp vanilla extract
  • 1 medium egg
  • Pinch of salt
  • 100g chocolate chips
  • About 30g unsalted and unroasted peanuts (to decorate)

Method:

  1. Preheat the oven to 180°C/160°C fan and line two baking trays with some baking paper.
  2. To make the cookie dough, mix the flour with the baking powder in a mixing bowl, then add all the remaining ingredients apart from the chocolate chips and peanuts. Mix together until everything comes together in a smooth dough.
  3. Finally, add about ¾ of the chocolate chips and mix through the dough until evenly distributed.
  4. Roll the dough into small balls then press down gently to flatten until about 1cm thick.
  5. Press the remaining chocolate chips and peanut halves into the biscuits to decorate, then bake in the preheated oven for about 15 minutes until lightly golden.
  6. Remove from the oven and leave to cool on the trays for a few minutes before transferring to a wire rack to cool completely.
