Although shop-bought granola is great, how cool would it be to make your own homemade granola, with exactly the ingredients and flavourings you want? This orange, cinnamon and pecan nut granola is absolutely scrumptious!

Cinnamon and orange are probably one of my all-time favourite flavours! The cinnamon gives it a lovely rich colour, the pecan nuts give the granola the perfectly crunch and the orange flavour takes it to the next level! I absolutely love this home-made granola and can´t wait to share the recipe with you!
This recipe is really simple to follow, very quick and makes about 400-450g of granola.

Orange, Cinnamon and Pecan Nut Granola | Homemade Granola
Recipe
Ingredients (makes 400-450g):
DRY INGREDIENTS:
- 200g (2 cups) whole rolled oats
- 40g (½ cup) pecan nuts
- 30g ( ¼cup) pumpkin seeds
- ½ tsp salt
- 2 tsp cinnamon
- zest of one orange
WET INGREDIENTS:
- 65ml (¼ cup) coconut oil, melted
- 65ml (¼ cup) maple syrup
- 1 tsp vanilla extract
Method:
- Preheat the oven to 180°C. Line a large baking tray with some baking paper.
- Add all the dry ingredients into a large mixing bowl and stir until combined.
- Next, add the melted coconut oil, maple syrup and vanilla extract to the dry ingredients. Mix well until all the dry ingredients are fully coated.
- Transfer the mixture to the prepared baking tray and separate it out evenly onto the tray. Don´t make the layer to thick – otherwise it won´t crisp up enough!
- Bake in the preheated oven for 20-22 minutes, turning the mixture half-way through the baking time. Don´t be tempted to bake it any longer, otherwise it will start to burn!
The granola will crisp up further once it cools. - Leave to cool completely before transferring it to a jar or an air-tight container. The granola will keep for a couple of weeks.
