As those of you who visit this blog regularly will know – I love a good traybake recipe! Today I am sharing with you a simple yet delicious Lemon and Lime Traybake which is perfect for birthday parties, small gatherings, or a bake sale! This recipe is so quick and easy to make that I’d even go as far as saying that it is fool proof! So get in the kitchen and start baking!

How do you make this Lemon and Lime Traybake?

All you will need to make this Lemon and Lime Traybake are a few easy-to-find ingredients and some basic baking equipment.

To make this cake you will need a 30x23cm traybake tin, I own (several – oops) of these Mary Berry Traybake Tins from Lakeland which I cannot recommend enough! For £12 they are an absolute bargain and I use this for 90% of all traybakes I make (check out some of my other recipes linked below). An electric hand whisk always comes in handy for baking (although a strong biceps and wooden spoon can do the trick, too!), and I would also recommend investing in a small palette knife for spreading the icing (though again you can use a metal spoon instead).

The actual cake itself is extremely easy to make, as it follows the all-in-one method (find out more about cake baking methods in my post here)! All of the ingredients are combined at the same time, meaning minimum effort and washing up! The most important thing when making this Lemon and Lime Traybake is to make sure the cake has completely cooled before putting on the icing, or it will melt and run off the sides of the cake!

Recipe

Ingredients

FOR THE CAKE

  • 225g baking spread or butter, at room temperature
  • 225g caster sugar
  • 275g self-raising flour
  • 1 tsp baking powder
  • 4 large eggs
  • 2 tbsp lemon curd
  • 1 lemon, zest only
  • 1 lime, zest only

FOR THE ICING

  • 300g icing sugar, sifted
  • 3-4 tbsp of lemon and lime juice
  • Lemon and lime zest, to decorate

YOU WILL ALSO NEED

  • 30x23cm traybake tin (I recommend this one)
  • Electric hand whisk (or a big biceps and a wooden spoon!)
  • Small palette knife or metal spoon

Method

  1. Preheat the oven to 180°C/160°C fan and lightly grease and line a 30x23cm traybake tin with baking paper.
  2. Add all of the ingredients for the cake into a large mixing bowl, reserving a small amount of the zest for decorating the cake. Beat everything together until smooth and well combined.
  3. Transfer the cake batter into the prepared baking tin and level the surface. Bake in the middle of the oven for 25-35 minutes, or until a skewer inserted comes out clean.
  4. Leave the cake to cool completely before carefully removing it from the tin and peeling away the baking paper.
  5. To make the icing, sift the icing sugar into a bowl and use a few squeezes of the juice from the lemon and lime to make a fairly thick yet spreadable icing. Add a little liquid at a time to make sure you get the consistency right, but you can add a little more icing sugar if you accidentally add to much.
  6. Carefully spread the icing over the cooled cake using a small palette knife or metal spoon and decorate with the remaining lemon and lime zest. Wait for the icing to set before cutting the cake into 18 pieces.
