This vegetable soup is one of my Grandma´s recipes! It is made with loads of onions, red lentils, and frozen mixed vegetables and couldn´t be easier to make!

Every time I go to visit my Grandma between October and March, she will have a large pot of this vegetable soup on the cooker! When I arrive and I´m absolutely frozen to the core, she will quickly heat a large bowl of this soup for me! It is so warming and delicious and just tastes like home!
This vegetable soup is really easy to make and requires only 4 ingredients. Onion, red lentils, frozen mixed vegetables, and ham stock cubes. You can use any vegetable mix you like, my favourite ones to use are a mix of broccoli, peas, corn, carrots and red pepper. I never thought this, but I absolutely love having some crunchy sweet corn in my soup! I buy this special mix from Morrisons.
That special vegetable mix is also great for adding to this healthy vegetable rice stir-fry!
Grandma makes this soup quite salty by adding plenty of ham stock cubes, and I absolutely love it! In fact, it´s one of the best things about it!
If, however, you prefer things less salty I would recommend not adding the final stock cube to the pot.
Cheap, healthy, freezer- and student-friendly!
My Grandma´s vegetable soup is also perfect for freezing! Make a big batch of soup and then you can freeze the soup in individual portions!
This soup is perfect for lunch or dinner on a cold winter´s day! It´s great served with some fresh, crusty bread! If you are wanting to make some homemade bread, why not try this quick cheese and chive soda bread, or make a German wholemeal seeded loaf.
The bread also goes really well with my carrot, lentil and ginger soup.
Grandma´s Vegetable Soup
Recipe
Ingredients:
- 2 large (or 3 medium) onions, roughly chopped
- 140g red split lentils
- 360g frozen mixed vegetables
- 2 or 3 ham stock cubes
Method:
- Place the lentils in a sieve and rinse thoroughly to remove most of the starch.
- In a large pot, start heating 900ml of water. Once almost boiling, add the ham stock cubes and stir until dissolved.
- Add the lentils to the liquid and bring to the boil.
- Meanwhile, peel and roughly chop the onions.
- Once the water is boiling, add in the chopped onions and frozen vegetables. Cover with a lid and let the soup come to the boil. Once boiling, you may choose to crumble in a third stock cube for a saltier flavour.
- Remove the lid and let it boil for roughly 10 minutes. Reduce the heat to low and simmer the vegetable soup for roughly 40 minutes. Stir the soup occasionally to make sure it doesn´t catch at the bottom and burn.
- Serve the soup with some fresh crusty bread. Any leftovers can be left in the pot and gently reheated.
