Today I am sharing with you a recipe for a quick and healthy snack: Frozen Yoghurt Bark! You can store this in the freezer so that you always have a small snack prepared and ready to go when you need it!

This Frozen Yoghurt Bark is super quick and easy to make and only requires a handful of ingredients! Greek yoghurt is mixed with some honey to give it some sweetness and is then spread onto a piece of non-stick paper in a thin layer. Then you can simply scatter your favourite or seasonal fruit on top (I opted for kiwi, blueberries, strawberries, and pineapple) to tailor the Frozen Yoghurt Bark exactly to your liking! I then sprinkled over some desiccated coconut for an additional tropical touch! All you then need to do is freeze and enjoy!

Frozen Yoghurt Bark | Healthy Snack Recipe

Recipe

Ingredients:

  • Fresh fruit of your choice (I used kiwi, blueberries, strawberries, and pineapple)
  • 400g Greek (full-fat) yoghurt
  • 2 tbsp clear, runny honey
  • Handful of desiccated coconut (optional)

Method:

  1. Start by cutting the strawberries, pineapple, and kiwi into thin slices. Then set aside until needed.
  2. Line a baking tray (that will fit into the freezer) with some non-stick baking paper.
  3. Next, in a small bowl, mix together the Greek yoghurt and honey until fully combined.
  4. Spread the yoghurt mix in a thin layer (about 3-5 mm) onto the prepared baking paper and use the back of a spoon to level the surface.
  5. Top the yoghurt with the prepared fruit and scatter over the desiccated coconut.
  6. Freeze for about 2-4 hours until completely firm, then cut or break the yoghurt bark into smaller pieces.
  7. I would recommend leaving the Frozen Yoghurt Bark to defrost for about 5 minutes before eating it. You can then store any leftovers in an air-tight Tupperware in the freezer to always have a snack ready when you need it!
