Chocolate and Hazelnut Granola

I have discovered that I really love making my own homemade granola! It´s not that shop-bought granola isn´t any good, but I really love being able to add the flavours I specifically want to it! Chocolate and hazelnuts are obviously a match made in heaven, so I really thought I should try incorporating that into my breakfast! So here is my recipe for a chocolate and hazelnut granola!

How To Make Chocolate and Hazelnut Granola

This recipe for my chocolate and hazelnut granola is super easy to follow and very quick to make! All you need is some oats, cocoa powder, hazelnuts, coconut oil and some sweeter – and then you are ready to go! Combine all the ingredients in a bowl, mix, spread onto a baking sheet and then all it needs is just under 20 minutes in the oven!

So all you need is a spare 30 minutes to make a chocolate and hazelnut granola that can last you for weeks!

What Goes Into This Granola?

You only need a few ingredients to make homemade granola, most of which you might already find in your store cupboard (find my list of student store cupboard essentials here)!

The coconut oil in this recipe helps bind the dry ingredients together and provides some healthy fats in this recipe. I also use a sweetener, in this case, I used maple syrup, but golden syrup or honey would probably work well, too.

All other extras in this recipe, the cinnamon, pumpkin seeds, coconut, chocolate chips and dried fruit are completely optional and can be easily substituted if you would like to add something different!

What´s The Best Way To Store Homemade Granola?

Homemade granola keeps surprisingly well – I keep mine for many weeks and it doesn´t go stale! I store my granola in a glass jar or a plastic Tupperware. Both works really well and keeps the granola nice and crisp for weeks!

Homemade Chocolate Granola

Chocolate and Hazelnut Granola |
With Coconut, Chocolate Chips and Cranberries

Recipe

Ingredients:

  • 200g porridge oats
  • 20g cocoa powder
  • 30g pumpkin seeds
  • 70g hazelnuts, roughly bashed up
  • 2 tsp cinnamon
  • ½ tsp salt
  • 65ml coconut oil, melted
  • 65ml maple syrup
  • 1 tsp vanilla extract
  • 30g desiccated coconut
  • 50g dark chocolate chips (optional)
  • 30g dried cranberries or raisins (optional)

Method:

  1. Preheat the oven to 180° and line a large baking tray with baking paper.
  2. In a large bowl, mix together the oats, cocoa, seeds, hazelnuts, cinnamon and salt. Then add in the melted coconut oil, maple syrup and vanilla and stir until all of the ingredients are well coated.
  3. Transfer the mix onto the prepared baking tray and spread it out in an even layer. In order to make larger clusters that you can break up later, press down the granola mix with the back of a metal spoon into a compact layer.
  4. Bake in the preheated oven for 9 minutes. Then remove from the oven, and give the mix a bit of a turn, before pressing it down again with a spoon.
  5. Return to the oven for another 5 minutes. If you are using the coconut, now sprinkle it over the top of the granola and leave it for another 4 minutes to toast (but not burn) the coconut.
  6. Remove the chocolate and hazelnut granola from the oven. It may still seem a bit soft but will harden once it cools. Don´t be tempted to leave it in the oven for much longer or it will start to burn. And as the mix is already dark brown, you will smell the burning before you see it – and then it´ll be too late (I have burnt this granola before whilst making it, and whilst not entirely inedible, once you´ve picked out the really burnt stuff, it´s not great, haha).
  7. Leave the granola until it is completely cool. Stir in any optional ingredients, such as dark chocolate chips or dried fruits.
  8. And then you can store your homemade chocolate and hazelnut granola in an air-tight jar or Tupperware for many weeks!
