Everyone loves a good wrap. You can choose between so many different things to fill them with and the added benefit is that they are quick and easy to make!

This recipe is for a chicken, pepper and avocado wrap – one of my favourites!

It is ideal to have for lunch or dinner, but also perfect for taking into university for a packed lunch. You could for example, make this wrap for dinner but at the same time already make one that you can pack up and take into university with you the next day!

This chicken, pepper and avocado wrap is really easy to make. Simply fry your chicken and red pepper whilst you are preparing the other components. Start by spreading on a spoonful of yoghurt, then scatter with some chopped salad leaves and then the avocado. Once you have done that, the chicken and pepper should be ready to be piled on top. Roll it up, slice the wrap in half and you are good to go!

You could also prepare this as a crunchwrap. Simply pile the fillings into the middle of the wrap, fold up and return to the hot frying pan. See below for more information.

Serve the wrap with a side salad or some coleslaw, or simply eat on its own!

Chicken, Red Pepper and Avocado Wrap

Recipe

Ingredients (serves 1):

  • 1 tortilla wrap of your choice (white, wholegrain, seeded, etc.)
  • 100g chicken breast fillet
  • ½ red pepper
  • pepper, aromat (or salt) and dried herbs, to season
  • 1 tbsp natural yoghurt
  • 1-2 leaves of salad
  • ½ medium avocado

Method:

  1. Cut the chicken breast into little pieces and slice the red pepper into strips.
  2. Place a frying pan over a medium to high heat and add a teaspoon of olive oil. Once the oil is hot, add the chicken and fry briefly on one side until it starts to change colour. Turn the chicken and then add the red pepper. Season everything with pepper, aromat and the dried herbs. Cook for a further 5 minutes, until the chicken is cooked and the peppers have softened.
  3. In the meantime, you can start preparing your wrap.

Add a dollop of natural yoghurt to your wrap and spread across the wrap with the back of a spoon, leaving some space at the edges.

Next, arrange the sliced salad in the middle of the wrap.

Then add the sliced avocado on top of the salad leaves.

Once cooked, place the chicken and red pepper on top of the other ingredients.

Fold the bottom and top inwards over the filling, then roll up the wrap. Slice in half and enjoy!

How can I turn it into a crunchwrap?!

What about putting a twist on a normal wrap and turning it into a crunchwrap?

Instead of arranging the fillings along the midline of the wrap, create a pile in the middle. Fold up the edges into the centre and return to the hot pan, folded side down.

Leave for about 30 seconds, then flip and also toast the other side. Watch the crunchwrap closely as it can burn really quickly!!!
