I never really fancied the idea of having porridge for breakfast… I thought it would be a bit boring and tasteless… But then I discovered that you can actually add things to it that make it taste good! And that´s when I came up with this apple and cinnamon porridge!
By the way, please don´t tell my Grandma that I do this. She would be outraged by the fact that I like to make my porridge sweet, rather than having porridge the traditional way by just adding salt! Urgh can you imagine?!?

How Long Does It Take To Make Porridge?
Not long at all! Again, one of the great misconceptions about porridge that I had. I thought it would take forever to prepare, but this Apple and Cinnamon Porridge can be made in under 10 minutes!
First, you add the oats, chia seeds and milk to the pot and wait for the oats to thicken. Then I through in the apples, leave them to stew in the porridge for a few minutes, flavour and then breakfast is good to go! So easy!
What Goes Into This Apple and Cinnamon Porridge?
Well, besides oats, apple and cinnamon of course I add a few extras to the porridge to make it taste good!
What type of milk should you use?
First, let´t talk about the liquid component of the porridge. Whilst you can use just water to make it, I love using almond milk instead! Or, I use a 50:50 ratio of almond milk to water. This part is completely optional though and you can use whatever type of milk you like. Or just use water!
Extra Nutrients – The Superfood Boost
Next, I also add chia seeds to my apple and cinnamon porridge. They add that extra nutritional value, and as they swell up and absorb the liquid, they help keep you fuller for longer.
Flavouring
In terms of flavouring, I add cinnamon (of course) and also some vanilla extract or ground vanilla to my porridge. If it isn´t sweet enough (which it often already is due to the apple or if I use sweetened almond milk), then I add a little bit of honey or maple syrup.
Topping
I like to top my porridge with a nice dollop of crunchy almond butter! If you haven´t tried it – I highly recommend you do! I absolutely love it – I hate peanut butter and almond butter is so much better! It´s not the cheapest thing to buy, but since I use small amounts it lasts me a while.
Finally, I like to add some almond slivers or fresh berries (raspberries or blueberries go well) on top if I have some, or add a little extra drizzle of honey or maple syrup.

Apple and Cinnamon Porridge with Almond Butter
Recipe
Ingredients (serves 1):
- 40g rolled oats
- 5g chia seeds
- 250ml of almond milk or water (or a mix of both)
- a medium pink lady apple, chopped
- 1 tsp honey or maple syrup (optional)
- 1 tsp of vanilla extract or ground vanilla
- Cinnamon
- ½ tbsp almond butter
- almond slivers or fresh berries, to serve (optional)
Method:
- Put the oats, chia seeds and milk/water into a saucepan and set over a medium heat. Cover with a lid.
- Meanwhile, wash and chop the apple.
- Once the porridge starts to thicken, add in the chopped apples and cook for a few minutes.
- Once the apples have started to soften, add in a generous amount of cinnamon, the vanilla and stir. Taste, and add some sweetener if necessary.
- Transfer your apple and cinnamon porridge to a bowl and serve with a dollop of almond butter and some fresh berries.
