I´ve called these Melissa´s (my sister) Brownies as this is one of the few things she actually makes – but boy does she make them well! This is our recipe for the BEST brownies ever! We have been using this recipe to make brownies since we were children and it is great! Works every time and they really are the best brownies I have ever tasted!

What makes these the BEST brownies ever?

I´m telling you, these really are the best brownies you will ever make! Brownies are such a classic thing to make and I am always surprised at how often they are not particularly good…haha!🤣

These brownies have a great flavour and consistency and are lovely and fudgy if taken out of the oven at the right time!

And then, what makes these the best brownies ever, is that in amongst all that gooeyness you will find a lovely crunch from pecan nuts! Whilst you could also use a different type of nuts (walnuts work pretty well, too) you simple cannot beat a pecan nut brownie!!! Trust me – it´s so worth it!

Whereas this version with pecan nuts is simply the best – I do have some other variations of these chocolate brownies that I like to make! You could add pretty much any extra you like to this basic recipe really it is very flexible!

I absolutely LOVE these White Chocolate and Raspberry Brownies, and adding in some (leftover) chocolate Easter eggs to make some Easter Egg Chocolate Brownies is also really fun! It is totally worth the investment (it´s not even that expensive) and this tray is absolutely perfect for making brownies and other traybake! It´s the perfect size, non-stick and great quality! I have had mine for years and it still looks as good as new!

Pecan Nut Brownies

The BEST Brownies Ever Really | Melissa´s Brownies

Recipe

Ingredients:

  • 175g butter
  • 175g dark chocolate, broken into pieces
  • 3 large eggs, beaten
  • 250g soft brown sugar
  • pinch of salt
  • 120g plain flour, sifted
  • 150g pecan nuts, roughly chopped
  • A little icing sugar, to finish

Method:

  1. Preheat the oven to 180°C. Grease the brownie tray and line with baking paper.
  2. Gently melt the butter and chocolate in a heat-proof bowl over a bain-marie (place the bowl over a small pot of simmering water without the bowl touching the water). Once they have completely melted remove from the heat and set aside to cool for a few minutes.
  3. Once the melted chocolate and butter mix has cooled  slightly, stir in the brown sugar and salt.
  4. Gradually add the beaten egg, a little at a time, mixing well between each addition.
  5. Finally, sift the flour into the mix and gently stir it in until fully incorporated. Finally, add the chopped pecans and mix.
  6. Pour the brownie batter into the prepared tin and tilt the tin so that the batter distributes itself evenly into all four corners of the tin.
  7. Bake the brownies in the pre-heated oven for 20-25 minutes. The brownie should start to shrink away from the sides of the tin and look fully baked on top. However, unlike with other cakes, to make a fudgy brownie, a skewer inserted into the middle should come out with a little bit of batter attached to it.
  8. Leave to cool in the tin for a few minutes before transferring the chocoalte brownie to a wire rack until cooled completely.
  9. To finish, slice the brownie into 18 pieces  (divide into 6 along the long end and 3 along the short end) and dust with icing sugar.
