Banana and cinnamon. A match made in heaven. There is no better way to start a cold, rainy day than with this banana and cinnamon porridge for breakfast.

Not only is porridge a healthy breakfast option, it is also quick and easy to make, budget-friendly and very filling! I don´t think there are any downsides to having this breakfast! It´s perfect for students, I have this on a cold morning before heading into university.

This banana and cinnamon porridge truly melts in the mouth, with its creamy texture from the almond milk and melted banana. Adding a pinch of cinnamon at the end takes this banana porridge to the next level!

Sprinkle some granola (try my homemade orange and pecan nut granola!) and some freshly sliced or chopped nectarines on top. You can also top this porridge with any other seasonal fruit you like.

Banana and Cinnamon Porridge

Recipe

Ingredients (serves 1):

  • 35g whole rolled oats
  • 5g chia seeds
  • 200ml almond milk
  • Pinch of cinnamon
  • ½ tsp maple syrup
  • ½ tsp coconut oil
  • 1 banana
  • 1 nectarine
  • Granola, to serve

Method:

  1. Put the oats, chia seeds and almond milk into a small saucepan over a medium heat.
  2. In the meantime, cut the banana into thin slices and the nectarine into segments.
  3. Once the porridge mixture starts to thicken, add in the coconut oil, followed by about 2/3 of the sliced bananas.
  4. Leave to cook until the bananas start to soften and “melt” into the porridge, whilst stirring continuously. Sprinkle over a little cinnamon.
  5. Taste, and if necessary, add a little maple syrup to sweeten.
  6. Once thick, pour the banana porridge into a bowl and add the rest of the sliced bananas and segmented nectarine on top. Sprinkle with a little extra cinnamon and granola, if you like.
