Fancy a quick and easy dessert? Then why not try making this mini cherry trifle?
With only 3 ingredients and no baking or cooking involved, these mini cherry trifles are the perfect quick dessert. And the best thing is, they still look really pretty and as if you have gone to some effort!
The recipe for this mini cherry trifle makes 2 dessert pots. Perfect for dinner-for-two, or to make enough for you to treat yourself two nights in a row!
The only ingredients you will need are biscuits, vanilla custard and some fresh cherries. You can use shop-bought ingredients, or use leftovers of homemade biscuits or custard. For example, I used leftover biscuits (un-iced) from my Easy Iced Biscuits recipe.
These mini cherry trifle pots are an extremely versatile dessert! Feel free to mix up all different kinds of biscuits, custards and fruit!
The best biscuits to use are probably plain shortbread, digestive or rich tea biscuits. For a flavour twist you could also use some plain chocolate or ginger biscuits.
For the custard vanilla and chocolate custard taste great, or you could also use a lower fat option, like vanilla quark.
Feel free to also change up the fruit in this recipe. Fresh raspberries or strawberries would also be great additions.
Mini Cherry Trifle | 5-minute dessert
Recipe
Ingredients (makes 2):
- 6 biscuits (shortbread rounds, digestives, rich tea, etc…)
- 12 tbsp vanilla custard
- 14 fresh cherries
- optional: chocolate shavings, for serving
Method:
- Wash the cherries and pat dry with some kitchen towel. Remove the stalks from all cherries but two. Set those aside for serving.
- Slice the cherries in half and remove the stones.
- In small serving pots, crumble 2 of the biscuits at the bottom of each one.
- Next, spoon 3 tbsp of vanilla custard on top of the biscuit layer and even out.
- Assemble the cherry halves evenly on top of the custard layer.
- Spoon the remaining custard on top of the cherries.
- Crumble one more biscuit over the final custard layer. Chill the mini cherry trifles in the fridge until ready to serve.
- To serve, top the trifles with the reserved cherry. Optionally, sprinkle over some chocolate shavings.
