You might have read my recent post on 7 Ways to Spice Up Your Salad. This Healthy Steak Salad uses a bunch of different ingredients I listed there, to create this delicious and interesting lunch or dinner.
This healthy steak salad is a perfectly light dinner for a hot Summer’s evening. I also often have this if I am not feeling too hungry in the evening. Plus, it means you´ll have space for some dessert! Maybe you could try these delicious chocolate éclairs?

Adding some tomatoes, red pepper, cucumber, spring onions, avocado and corn to the round leaf lettuce gives it a little extra crunch! For the meat component of this salad I chose a lean, marinated pork steak.
Healthy Steak Salad
Recipe
Ingredients (serves 1):
FOR THE SALAD:
- 4-5 large leaves of green round lettuce
- 1 large salad tomato, chopped
- ¼ cucumber, sliced and quartered
- ½ small tin of corn
- ½ medium avocado, chopped
- 1 spring onion, sliced
- ½ red pepper, sliced
- 1 thin, lean, marinated pork steak
FOR THE DRESSING:
- salt
- pepper
- juice of half a lemon
- ½ tbsp white vinegar
- splash of brown vinegar
Method:
- Wash the salad leaves, tomatoes, red pepper, spring onion and cucumber.
- Slice all the components for the salad and put them into a large salad bowl.
- Heat some olive oil in a small frying pan. Once hot, fry the steak for 2-3 minutes on either side until cooked through.
- To make the dressing, season the salad with some salt and pepper, then add the remaining ingredients for the dressing. Taste, and add more seasoning if you have to.
- To serve, place the salad on a plate and slice the pork steak. Arrange the pork strips on top and enjoy!
