These quinoa stuffed peppers are easy to make and only require only 5 simple ingredients: peppers (whatever colour you like), onion, quinoa, tomato purée and feta cheese.
Start off by cooking your quinoa with the onion and tomato purée. Whilst your waiting for the quinoa to cook, roast your peppers in the oven. Fill the roasted peppers with the quinoa mixture, top with feta and return to the oven for a few minutes. And voilà, your lunch/dinner is served!
The quantities below are enough to serve one person, but this recipe can easily be doubled, tripled, etc. if you are feeding more than yourself.
The stuffed peppers are delicious on their own, but are also nice served with a little fresh salad on the side.

Quinoa Stuffed Peppers with Feta Cheese
Recipe
Ingredients (serves 1):
- 3 halves of colourful peppers of your choosing
- 50g quinoa
- 1 onion, chopped.
- ½ tbsp tomato purée
- 200ml chicken stock
- 50g feta cheese
Method:
- Preheat the oven to 200°C.
- Set a saucepan over a medium heat and add a teaspoon of olive oil to the pot.
- Once hot, add the onions to the pot and cook for 3 minutes until starting to soften. Add in the tomato purée and cook for another minute.
- Next, add the quinoa and the chicken stock to the pot. Half-cover the pot with a lid and leave to simmer for 20-25 minutes.
- In the meantime, wash and cut the peppers in half. Place on to a baking tray, cut side down, and roast in the oven for about 15-20 minutes. The peppers should start to soften and begin to char slightly.
- Remove the peppers from the oven. Once cooked, spoon the cooked quinoa mix into the peppers.
- Crumble the feta cheese on top and return to the oven for a further 5 minutes, until the feta cheese starts to brown slightly.
