This recipe is really quick to make, as it requires no waiting for the dough to chill. Simply combine the ingredients to make the dough, roll and cut into shapes and bake.
Hence why these iced biscuits are perfect if you want to whip up a quick batch to go with your afternoon tea, or if you are baking with children. They can get involved with making the dough and there is no need to wait between making the dough and cutting it into shapes. Recipe Tip:
The biscuit dough can also be frozen. Simply half the dough before rolling it out, wrap it up tightly in clingfilm, keep in a freezer bag in freeze for up to a month. Once ready to use it, allow the dough to defrost completely and then simply continue from Step in the methods below.
Easy Iced Biscuit Recipe

Ingredients (makes about 30 biscuits):
FOR THE DOUGH:
- 100g butter
- 100g caster sugar
- 1 medium egg, lightly beaten
- 280g plain flour
FOR THE ICING:
- 200g icing sugar
- Lemon juice
- Icing sugar
- Colourful sprinkles
- Food colouring, optional
- Small piping bags, optional
Method:
- Preheat the oven to 190°C/170°C fan.
- To make the dough, first cream together the butter and the sugar with an electric whisk until pale and fluffy.
- Next, gradually beat in the egg.
- Stir in the flour, then knead the mixture with your hands to make a dough. At this stage it is possible to freeze the dough.
- To minimise the mess of flour scattered everywhere, roll out the dough between two pieces of cling film until about ½ centimetre thick. Use a biscuit cutter of your choice to cut out shapes before laying them on a baking sheet lined with baking paper.
- Bake in the preheated oven for 10-12 minutes until golden brown.
- Leave to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
- To make the icing, sift the icing sugar into a bowl. Add a little bit of lemon juice to the icing sugar and mix. Continue adding the lemon juice a little at a time, mixing well between each addition. You are aiming to create a thick, glossy icing that can be spooned over the biscuits without running off the sides. See tips below for further advice on making the icing.

How to make the perfect biscuit icing:
To make the icing, sift the icing sugar into a bowl. Add a little bit of lemon juice to the icing sugar and mix. Continue adding the lemon juice a little at a time, mixing well between each addition
If you want a less intense lemon flavour, you can use a little lemon juice to start with and then use water. You could even omit the lemon juice entirely.
If you have added too much water and the icing has become to runny, simply stir in a little more icing sugar to thicken.
You can use food colouring to create different variations of the icing. Simply divide the icing into however many bowls you like and add a different colour to each.
