It’s almost Easter and the supermarkets are FULL of chocolate Easter eggs! Everywhere I look there is more chocolate, so I finally gave in and bought some Smartie Easter Eggs to make Smarties Easter Egg Cookies! This recipe is an adaptation of my Mini Egg Cookie recipe from last year, and you can use pretty much any (leftover) chocolate Easter eggs you like in this recipe!
Smarties Easter Egg Cookies – What chocolate can you use?
The easy answer is – any chocolate you like! Although I suppose a few Smarties are essential if you want them to be Smarties Easter Egg Cookies 😉 As I mentioned above though, these cookies are a great way of using up any leftover (if you have such a thing!) chocolate eggs from Easter.
For this recipe, I used a mix of normal Smarties, Smarties Eggs and Orange Smarties Eggs. You could choose to use just one of these, or a mix of all three like I did, it’s completely up to you!
In addition, I used another 90g of milk chocolate to add even more chocolate to these cookies! While you could use any milk (or also dark chocolate) you like, I bought a Smarties chocolate bar which is a milk chocolate bar filled with even more bits of Smarties!
Tips for making these Smarties Easter Egg Cookies
When making these Smarties Easter Egg Cookies, I have a few tips and tricks for you to make your life easier and help you succeed!
Cutting up Smarties or Smarties Eggs with a sharp knife can sometimes be a bit of a challenge. So I would recommend either using the flat side of a large-bladed knife to press down and crush them, or put them into a freezer bag and bash them with a rolling pin. Make sure you don’t crush/bash them into a complete powder though, as you do still want a few chunks in your cookies.
Second, it is really import you use real butter and chill the cookies before baking. If you use baking spread, the cookies won’t firm up as much in the fridge while you chill them, making them much more likely to spread and become very thin in the oven. That way they will lose their chunkiness and chewiness that is so crucial to making a good cookie!

Smarties Easter Egg Cookies
Recipe
Ingredients (makes 12 large cookies):
- 125 g butter, softened
- 100 g soft light brown sugar
- 75 g white granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 275g plain flour
- 10g cornflour
- 1 ½ tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp fine sea salt
- 100g Smarties chocolate (or use milk or dark chocolate), roughly chopped
- 250g Smarties Eggs and/or Smarties (I used a mix of both)
Method:
- Start by preparing the chocolate, Smarties Eggs and Smarties, depending on what you are using. Roughly chop everything into small chunks, reserving around 50g of the Smarties Eggs and Smarties for decoration.
- In a large mixing bowl, cream together the butter, soft light brown sugar and white granulated sugar using an electric whisk for about 2 minutes until fluffy and paler in colour.
- Next, beat in the egg and vanilla extract until fully combined. Then add in the plain flour, cornflour, baking powder, bicarbonate and salt and mix to form a cookie dough. It may be easier to use your hands at the end to bring the mixture together.
- Add in the chopped chocolate, Smartie eggs and Smarties and mix into the cookie dough until evenly distributed throughout.
- Roll the dough into 12 large balls (about 70g each). Place onto 2 large baking trays lined with baking paper and flatten them slightly by gently pressing down on them with your hand. Then stick the reserved Smarties and Smarties Eggs into the cookies and chill them in the fridge for at least 60 minutes.
- Preheat the oven to 200°C or 180°C fan. Bake the cookies in the preheated oven for 12-14 minutes until golden brown around the edges.
- Place the tray onto a wire rack and leave the cookies to cool on the tray for at least 30 minutes until firm before serving.
