Sweetcorn mash? Yep – it’s amazing! This spiced cod with sweetcorn mash and broccoli is going to become another healthy weeknight dinner go-to for me!

The below recipe makes two portions, so great if you are having dinner with somebody. During the week I am usually by myself, so I only make one cod fillet and one portion of broccoli, but make the full amount of sweetcorn mash. I can then heat the leftover mash in the microwave the next day, and cook a fresh piece of fish and broccoli! I’d definitely leave those two elements for the next day, because microwaving fish the next day will overcook it and make it rubbery. And the broccoli would just turn to mush… So best to make those on the day.

Spiced Cod with Sweetcorn Mash – How do you make it?

This spiced cod with sweet corn mash if very straightforward to make – perfect for a quick weeknight dinner.

To make it, I used frozen cod fillets which I had defrosted in the fridge during the day. In terms of ways to season the cod, you can use pretty much any spices or dried herbs you like! Cajun, Chilli Powder, or Jerk seasoning for a spicey twist, dried parsley, thyme or mixed herbs, salt, pepper, smoked paprika, curry powder and/or turmeric for colour… The list is endless. Just use whatever you fancy and rub it into the fish with a little bit of olive oil.

The sweetcorn mash is made by puréeing together some tinned sweetcorn, garlic, and chilli (optional) with a splash of milk. You can then stir through some parmesan cheese and chopped coriander for a bit of saltiness and a fresh herb touch!

Finally, I served this dish with some broccoli, but peas, green beans, mangetout, asparagus, etc. would certainly go well with this, too.

Spiced Cod with Sweetcorn Mash and Broccoli

Recipe

Ingredients (serves 2):

  • 2 cod fillets (defrosted if using frozen)
  • 2 tsp olive oil
  • A mix of ground spices and dried herbs (I used salt, pepper, mixed spice, chilli, garlic granules, smoked paprika, turmeric, parsley and thyme)
  • 326g sweetcorn
  • 2 cloves garlic, roughly chopped
  • ½  red chilli, finely sliced (optional)
  • 1 tbsp milk
  • 20g parmesan cheese, grated
  • Small bunch fresh coriander, roughly chopped
  • Salt and pepper, to season
  • 1 fresh broccoli, cut into florets (or use frozen)

Method:

  1. Drizzle the cod fillets with the olive oil and add your seasoning of choice. Just use whatever you have/want and the amount you want and rub it into all sides of the cod.
  2. Bring a pot of water to the boil, salt generously and boil for 5-7 minutes until cooked.
  3. Put the sweetcorn, milk, garlic and chilli into a small pot and heat through for 2-3 minutes.
  4. Heat a frying pan until hot (you won’t need any extra oil) and fry the cod for 2-3 minutes on each side until cooked through.
  5. Once the corn is warm, use a stick blender to blitz until semi-smooth. It’s nice to not blend it completely and leave a bit of texture. Stir through the grated parmesan cheese and coriander.
  6. Serve the spiced cod on a bed of puréed sweetcorn and some cooked broccoli on the side.
