Honey and Walnut Granola

I say this every time, but I think my newest granola “invention” is my best version yet! This Honey and Walnut Granola is great sprinkled over my favourite breakfasts, such as this 5-Minute Classic Breakfast Bowl or my favourite Blueberry Smoothie Bowl. Instead of the usual maple syrup, I used honey to make this granola, and I really love the flavour of it!

What goes into this Honey and Walnut Granola?

I based this honey and walnut granola on some of my other homemade granola recipes, such as my Cinnamon, Pecan Nut and Orange Granola.

As you might have guessed from the name, this granola is obviously made with honey and walnuts. I replaced my usual pumpkin seeds with sunflower and linseeds and added a bit of ground vanilla for a little extra je-ne-sais-quoi!

How do you make this Honey and Walnut Granola?

Homemade granola is extremely easy to make! All you need to do is combine all of the ingredients in a bowl and bake!

Start by adding all of the ingredients to a bowl before adding the wet ingredients, i.e. the honey, melted coconut oil and vanilla extract.

Coconut oil is usually solid at room temperature, so you´ll need to melt it before adding it to the dry ingredients. The best way to do it, I find, is to put the coconut oil into a small bowl and place that into a slightly larger bowl filled with boiling water. The heat will melt the coconut oil, but make sure you don´t get any water into the oil.

This granola needs a little less time in the oven than my other granola recipes, I think the honey makes it brown faster than when you use maple syrup. So this granola only needs about 15 minutes in the oven!

Recipe

Ingredients:

  • 200g porridge oats
  • 30g sunflower seeds
  • 15g golden linseeds
  • 75g walnuts, roughly chopped
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 65ml coconut oil, melted
  • 65ml honey

Method:

  1. Preheat the oven to 180°C. Line a large baking tray with greaseproof paper.
  2. Melt the coconut oil as explained above.
  3. Put all of the dry ingredients and mix them together. Add the honey, vanilla extract and melted coconut and stir until the dry ingredients are fully coated.
  4. Transfer the granola to the baking tray and spread out in an even layer.
  5. Bake the granola in the preheated oven for 15 minutes, turning once half-way through. After you have turned the granola, use the back of a spoon to press the granola down a little if you like bigger clusters of granola.
  6. Remove the granola from the oven (don´t leave it in for longer than 15 minutes, otherwise it will burn) and leave to cool completely. The granola will crisp up more as it cools.
  7. Once cooled completely, you can store the granola in a jar or air-tight container for 3-4 weeks.
