This Cheese and Chive Soda Bread is super quick and easy to make. With no kneading and no proving involved, anyone can make it and have a freshly baked soda bread to eat in under an hour!
Cheddar cheese and chives – probably one of my favourite flavour combinations! So I thought why not pack them into a delicious homemade soda bread?
How does it work?
This cheddar cheese and chive soda bread only requires 7 ingredients! You don´t use yeast as a leavening agent like you would for other bread, which makes soda bread super simple and quick to make!
Instead, the rise in this bread is achieved by the reaction of the bicarbonate of soda with the buttermilk. Lactic acid, which is contained in buttermilk reacts with the bicarbonate to form carbon dioxide, which causes the bread to rise.
I absolutely LOVE the smell of freshly baked bread (I mean who doesn´t) and the smell from this cheese and chive soda bread is amazing! Haha, it takes a lot to get my flatmates to leave their rooms, but they did when the smelt this! 🤣
Perfect to serve with soup or for making sandwiches…
This soda bread is perfect to serve alongside a bowl of soup. Why not try making my quick and easy carrot, lentil and ginger soup. This bread goes so well with it!
Or you can use it to make sandwiches for lunch. I love having it with some cream cheese (garlic and herb is the best imo…!). And then feel free to put some lettuce or basil or something on top, and enjoy with some fresh juicy tomatoes or some strips of red pepper!😋 Perfect for your student lunchbox!
This recipe is a twist on Paul Hollywood´s classic soda bread recipe I made just a few weeks ago. You can find the recipe with my notes here.
Recipe Tip:
Soda Bread is best eaten on the day, it will last for 2-3 days though if you wrap it up in a plastic bag. It´s great the next morning when it´s toasted with some melted butter on top!
BUT – this cheese and chive soda bread can also be frozen! Simply freeze the bread in portions, and then just take it out a few hours before you want to eat it!
Cheddar Cheese and Chive Soda Bread
Recipe
Ingredients:
- 250g plain white flour
- 250g plain wholemeal flour
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 50g cheddar cheese, grated
- 30g chives, finely chopped
- 420ml buttermilk
Method:
- Preheat the oven to 200°C. Line a baking tray with a sheet of baking paper.
- Take a bowl and mix together both types of flour, the bicarbonate of soda, salt, grated cheese and chives.
- Add in the buttermilk and mix with a wooden spoon to make the dough (it might be slightly sticky).
- Tip the dough onto a lightly floured surface and carefully roll and fold the dough until it comes together – but do not knead!
- Shape the dough into a rough ball and flatten slightly. Transfer the dough to your baking tray.
- With a large knife, score the dough with a deep cross (you can cut almost all the way down to the bottom of the loaf) to divide it into quarters. Then dust the bread with flour.
- Bake in the oven for 45-50 minutes until golden brown. The bread should sound hollow when you tap it from below.
- Leave to cool on a wire rack or enjoy warm!
