Student Meal Prep Recipes - 6 Easy Ideas

The semester is coming to an end, and it is time to start thinking about exams. What can often happen, is that will all your studying, you cannot be bothered to do any cooking! So here are 6 Student Meal Prep Recipes, so that you can prepare your meals in advance and can avoid cooking in revision/exam week!

Below, you will find a mix of recipes for breakfast, lunch and dinner, that are quick and easy to cook, taste great, and are fridge/freezer friendly, making them perfect for preparing in advance!

Let´s get straight into it!

Easy Homemade Granola with Orange, Cinnamon and Pecan Nuts

1) Homemade Granola

If you want to try making your own breakfast granola, which will keep in airtight container for weeks, then why not try making this yummy Orange, Cinnamon and Pecan Nut Granola! It tastes amazing, very “Christmassy”, which is great for this time of year, and is quite quick and easy to make.

Have it in the morning with some milk or use it to top your cereal, just like I do in my Classic 5-minute Breakfast. A yummy and filling breakfast, perfect for a study day.

2) Coronation Chicken Sandwich Filler

When I go to the library to study, I like to take a packed lunch with me. That way I have no excuse to already leave at lunchtime…

This Coronation Chicken recipe is perfect for filling sandwiches. I always look forward to my lunch when I have made this.
You could also use this to fill a wrap or top a baked potato!

Easy Hummus

3) Homemade Hummus

Hummus is another great thing to fill your lunchbox with for a healthy study snack. Simply pack a large dollop of hummus with some carrot or cucumber sticks for a quick and easy snack. This recipe for my Homemade Hummus is really easy to make, and it will last for up to a week in the fridge!

It is also great if you are craving a creamy pasta dish for dinner! Just use your homemade hummus to make this Creamy Hummus Linguine recipe!

4) Grandma´s Vegetable Soup

I LOVE this soup, there is nothing more I can say about it. It´s perfect for freezing in portions and quickly defrosting on the day. If your kitchen is cold (as most kitchens in student flats are…) you can also just leave the pot of soup on the cooker and gently reheat it whenever you want a bowl of it. 5) Easy Vegan Mixed Bean Chilli

Next on my list is this delicious Vegan Mixed Bean Chilli. Get your 5-a-day all at once with this mix of onion, pepper, chopped tomatoes, black beans, kidney beans and sweet corn (that´s 6 even!). Add more goodness by topping this chilli with some chopped avocado, or serve it with rice, naan bread, or tortilla chips! Again, this chilli is great for batch cooking, keeps in the fridge for 2-3 days and is also perfect for freezing!

6) Homemade Tomato Sauce

Homemade Tomato Sauce tastes so much better than the shop-bought version and is also a lot healthier! Make a large batch of sauce and reserve some of it before adding the pasta. Keep it in a Tupperware in the fridge or freeze it. Once you are ready to eat it, cook your pasta and add a little of the pasta cooking water to the sauce. Drain the pasta and then use the pot you used for the pasta to gently heat the sauce. Add the pasta, toss well in the sauce and enjoy!
