Yay, another 5-minute breakfast recipe. This series of breakfast recipes is quick and easy to make (in under 5 minutes!), cheap, filling, healthy and most importantly absolutely: scrumdiddlyuptious.
This is a spin on my classic 5-minute breakfast recipe using a new-found favourite of mine: frozen blueberries.
As you might know, buying fresh blueberries all the time can be a bit expensive, especially if you consume them at the same rate as I do… So frozen blueberries have become my new best friend. They still taste good and you get more for less – win, win I would say. And the best thing about them is, that when they defrost, they release some lovely, purple-coloured juices. And those juices are the key to my home-made blueberry yoghurt. Simply take out a portion of blueberries before you go to bed and leave to defrost in the fridge overnight. In the morning, mix in your favourite yoghurt and watch the magic happen.
Haha, maybe I’m a bit of a child in this way, but I get very excited watching the yoghurt marble and slowly turn purple. Just give it a try, you´ll see what I mean. It’s oddly satisfying… 😉
Once you´ve got your frozen blueberries this recipe is simple to follow as it uses mostly store cupboard ingredients. So no excuse not to try it. If you have a little more time on your hands, you could also try making these amazing chocolate overnight oats.
5-minute breakfast | Blueberry Yoghurt
Recipe
Ingredients:
- 100g frozen blueberries
- 30g of wholegrain whole rolled oats
- 20g granola of your choice (if you are in the UK, I really like the choc and nut granola from Morrisons)
- 110g natural yoghurt
- 5g chia seeds
- 1 medium banana (about 100g once peeled)
- cinnamon (optional)
- a handful of fresh fruit (blueberries, raspberries, grapes)
Method:
- The night before, take out about 100g of frozen blueberries and place it into your breakfast bowl. Place in the fridge overnight to defrost.
- In the morning, take out your bowl and add the natural yoghurt. Stir together the yoghurt and the fruit and let the magic happen – your yoghurt will turn purple (don´t ask me why I get so excited about that)!
- Weight out your oats, granola and chia seeds on top.
- Slice the banana and layer the slices on top of the yoghurt.
- If you like, sprinkle with cinnamon (the amount is up to you, I like a lot!).
- To eat, I mix everything together and just dig in! Enjoy!
