With the Easter weekend just around the corner, you may still be looking for some inspiration for Easter Brunch Recipes. Due to the coronavirus pandemic, unfortunately, I won´t be able to have my friends round for an Easter brunch this year. But I will still try to make the best of it, and spend the weekend making some of these Easter Brunch Recipes!
A good Easter brunch should have both sweet and savoury components, so here are some of my recipes that would be suitable for the occasion:
Sweet Easter Brunch Recipes
Chocolate Cupcakes with Chocolate Buttercream & Mini Eggs
Everyone likes a good cupcake, and you really cannot go wrong with these Easter Chocolate Cupcakes with Mini Eggs! They are easier to make than you might think! If you prefer, you could also check out this recipe for Vanilla Cupcakes or Mini Lemon Fairy Cakes! And don´t forget to find out all about how to make the perfect buttercream in my Baking Basics post!
Classic Fruit Scones with Orange Zest
Scones are absolutely perfect for a brunch! They are really quick and easy to make, and you can adjust the flavour to your liking! My recipe for sweet scones contains orange zest and dried fruit, but you could omit or switch any of these flavours with ones you prefer! Click through to my recipe for Fruit and Orange Zest Scones or check out a savoury version, made with cheese and chives, below!
Spiced Carrot Cake
I absolutely LOVE carrot cake – it´s one of my all-time favourites! This Spiced Carrot Cake is lovely and moist, packed with plenty of spices, raisins and some crunch from the walnuts! The best bit, however, is the Orange Cream Cheese Frosting smothered all over the top!
If you prefer making traybakes, check out this Carrot Cake Traybake recipe! The cake has a beautiful texture due to mashed bananas in the cake mix, and is also covered in a yummy cream cheese frosting!
Hot Cross Buns – Traditional British Easter Bake
I mean no Easter brunch (especially in the UK) would be complete without Hot Cross Buns! They are absolutely divine once they have been toasted, split in half, with loads of butter and jam on top! Yum, yum, yum!
This year, why not try making some hot cross buns yourself? My Hot Cross Bun recipe is made with extra spice and extra fruit! Just the way I like it!!!
If you want to try out some new recipes using enriched dough, why not also give my Swedish Cinnamon Buns or my German Nusszopf or Nussschnecken (enriched dough filled with a crunchy chocolate and hazelnut filling).
Easter Egg Chocolate Brownies
Who doesn´t like a chocolate brownie! And what better way to end an Easter brunch with a chocolate brownie filled with chocolate Easter eggs? Click here for the recipe.
Lemon and Poppy Seed Drizzle Bundt Cake
If you prefer something more zingy over a chocolatey bake, then why not try out this delicious Lemon and Poppy Seed Drizzle Bundt Cake? It looks impressive, but this all-in-one recipe is really easy to follow!
Some of my other popular recipes for lemon cakes include my Lemon Drizzle Traybake, Lemon Yoghurt Cake, No-Bake Lemon Cheesecake and Lemon Meringue Pie!
Savoury Easter Brunch Recipes
Soda Bread
Soda Bread is the perfect addition to any Easter Brunch table. It is so quick and easy to make and you can add whatever flavours you would like! Great for serving with some cream cheese, smoked salmon and other fresh meat, such as sliced ham or salami! Yum!
Check out my recipes for a Classic Irish Soda Bread, a Cheese and Chive Soda Bread and a Caramelised Red Onion and Balsamic Soda Bread!
Egg Omelette with Avocado, Cream Cheese and Smoked Salmon
Easter would not be Easter without eggs. Whilst a lovely boiled egg or scrambled egg would go a long way with one of the soda or sourdough breads, why not treat yourself to something more special?
These Omelette “Wraps” are filled with cream cheese, avocado and smoked salmon and are a perfect treat for brunch! Of course, you could also fill them with other ingredient such as fried bacon or ham! Check out the recipe here.
Cheddar Cheese and Chive Scones
I absolutely love the combination of cheese and chives! I made these scones for Easter last year and they went down a treat with my friends. They taste so good when they are fresh from the oven! It´s very satisfying to cover them in butter and watch it melt into the scone! Click here for the recipe!
Homemade Sourdough Bread
White Sourdough Loaf Rye Sourdough Bread Seeded Sourdough Bread
If you have been following my recipes for a while now, you´ll know that I absolutely love my sourdough starter and experimenting with new flavours of sourdough bread! If you haven´t made your own sourdough starter yet – what are you waiting for? Check out my Baking Basics post on How To Make A Sourdough Starter.
Sourdough bread is a great addition to your Easter brunch – and you can try out so many different flour and flavour combinations! Here are some of my favourite sourdough recipes: Crusty White Sourdough Loaf, Rye Sourdough Bread, Seeded Sourdough Loaf.
I hope this collection of Easter brunch recipes has given you some inspiration to get into the kitchen and start baking! I have already made my Hot Cross Buns and will be making some of my favourite Cheddar Cheese and Chive Scones this weekend!!! Can´t wait!
